Zest Cooking Class: Homemade Corned Beef

Chef Lisa shows you how to brine a brisket in preparation for St. Patty’s Day, so you can serve up homemade Corned Beef.

If you’d like to make this recipe at home, either with Chef Lisa or later, you’ll need the following:

  • 5-6# Beef Brisket, locally sourced from Yellowstone Valley Food Hub
  • 1.5# Kosher Salt
  • 2 Bay Leaves
  • 1 tsp mustard seeds
  • 1 sprig thyme
  • 10 juniper berries
  • 10 crushed peppercorns
  • 1-0 allspice berries
  • 1 tbsp coriander
  • 9 whole cardamom pods
  • 6 tsp sodium nitrate
  • 1# dark brown sugar
  • 5 garlic cloves
